Clan Paleovirtus was on the road yesterday, finally heading home after an extended Christmas Holiday.
This means, amongst other things, that I had a day off from kitchen duties. I could have pulled out a camping stove and a wok on the train, but I think it might not have gone down terribly well with the on-board personnel.
Today’s post, then, is all about a side dish and a dessert, that were made during our time away, both interesting variations on earlier themes.
Spinach Cauliflower Rice
First up, spinach cauliflower rice. This was improvised around a 250g pack of cauliflower rice, and some baby spinach that was initially destined to be in a spinach, carrot, and broccoli salad, until the broccoli was found to be off. Off as in a “large, ornate blooms of mould flourishing between the florets” kind of off.
I re-jigged things slightly, as you do, by initially wilting the 130 grams of baby spinach in a hot, lightly oiled frying pan in batches. I then fried off a couple of teaspoons of cumin seeds and 3 finely sliced spring onions (scallions), before adding the cauliflower rice to the pan.
Things then proceeded a la Jeera Cauliflower Rice, with the exception that I added the wilted spinach to the pan for an additional minute at the end of the cooking time.
As backs-to-the-wall-experiments go, it certainly worked well enough, and served as a good accompaniment to our Pork and Pineapple curry.
New Year’s Eve Fruit Salad
This was supposed to be a mango, melon, pineapple, and strawberry salad, but the mango had other ideas. It seemed good enough on the outside – nobody sets out to buy an obviously mushy mango – but was actually rotten to the core. Bah, etc.
Still, the remaining fruits worked well enough together, especially when bathed in an orange juice and honey dressing (the juice of one orange, and as much honey as you dare), and then given what for with a righteous fistful of dessicated coconut.
Nicely complemented the Ribeye Roast we had as our end-of-year dinner.
