The design of the modern bicycle has hardly changed since the 1880s. That’s how good it is.
Sure, new technology has lead to slight changes over the years – better tyres, lighter frames, control cables, and so on, but the core concept of a frame made of two triangles, and two equally sized wheels, the rear one being chain driven, remains unaltered.
I kind of feel the same way about this dish.
At its heart it’s just a tweaking of Smoky Leek And Mushroom Chicken.
This version uses chicken on the bone rather than breast meat, swaps out the leek for onion, and does away with the mushrooms.
I also left out the white wine, but added a couple of tablespoons of tomato purée to give the sauce a bit of body.
Chicken, bacon, paprika.
Classic combo. No fixing required.
